What exactly is juice?

To be called juice, the drink must consist of 100% pressed fruit, vegetables or berries. The addition of water, flavourings or other additives is not allowed, according to the Finnish Food Authority’s regulations on juices and nectars. In juice, lemonade or nectar, water may be added. Juice is sold as a ready-to-drink product or as a concentrate that you mix yourself into a finished juice before drinking it. This type of juice must be labeled “from concentrate”. Juice from concentrate means that the water is removed from the juice after it has been pressed.

Pasteurization: Pasteurization means heating a food to a temperature and then quickly cooling it down. Heating freshly pressed drinks to a certain temperature kills bacteria and the harmful micro-organisms that cause fermentation. Warming also increases sustainability. Some are gently pasteurized for a short time at a low temperature, others for longer and at a higher temperature.
